Ingredients

  • 1 pound ground beef (80/20)

  • 2 teaspoons garlic cloves, minced

  • 1 cup onion, chopped

  • 3 cups sliced ​​zucchini

  • 1/4 cup beef or chicken broth

  • 1/3 cup sour cream (full fat)

  • 2 tablespoons cream cheese

  • 1/2 teaspoon fine sea salt

  • 1/2 teaspoon ground black pepper

  • 1 teaspoon Worcestershire sauce (or coconut aminos for GF)

  • 1.5 cups grated cheddar cheese

Instructions

  1. In a cast iron skillet, cook the burger over medium heat until browned. Remove the ground beef and drain the fat, leaving 1 tablespoon of fat in the pan to sauté the vegetables.
  2. In the same pan cook the chopped onions over medium heat until they begin to soften, which will only take a few minutes. Add minced garlic and cook. for 1 more minute.
  3. Add the zucchini and broth. to the pan and cook until the zucchini is soft.
  4. Lower the heat to medium-low add cream cheese then sour cream.
  5. Add ground beef return to the pan along with the salt, pepper and Worcestershire sauce and stir the ingredients.
